Bread is baked at Mountjoy Prison only, whence it is supplied also by rail to Portlaoighise Prison. The remaining establishments are supplied by purchases under contract from commercial producers.


Comprehensive prison costings are not undertaken but the cost per 4-lb. loaf on the basis of the actual commodities used (i.e. exclusive of overheads, prisoners’ labour, etc.) worked out at 11d. in the year under review (1954-5). The contemporary contract prices for the 4-lb. loaf for Limerick and Sligo Prisons were 1s. 4½d. and 1s. 5d. respectively.
